This bean is very famous for its culinary applications. It is quite rich in protein, starch and sugars and relatively low in fat. From the dietary viewpoint it can be considered a complete food containing a high nutritional value which can adequately substitute meat. Cocco is a white bean with a particularly tasty delicate flavour characterised by an extremely fine pellicle which can hardly be sensed by the palate
Suggestions for Use
Soak in slightly salted warm water for about 12 hours prior to cooking.
Gently simmer in a tall narrow pot ( earthenware is best) in as little water as possible (if necessary add boiling water while cooking) Use a very low flame so as to avoid violent boiling.
