The lentil, with its low fat and rich natural fibre and protein content, is highly considered by nutritionists because it is easy to digest and offers a high nutritive value. Recent studies claim that this legume should play a central part in the modern diet.
Suggestions for Use
Wash the lentils, place them in cold salted water and bring them to the boil. Leave them to simmer slowly and once cooked do not pour off the water in order to avoid the loss of vitamins, mineral salts and .. such a great flavour.
In addition to eating them with the classical pig’s trotter, ‘cotechino’ (spiced pork sausage), rice or pasta, we also recommend the simplest and most dietetic method: take a slice of toasted bread flavoured with garlic, pepper and typical Umbrian extra virgin olive oil and pour the lentils on top together with a little of the water used to cook them and …‘Buon Appetito!’
